Spicy Honey-Glazed Salmon with Mango Salsa
Ingredients
For the Salmon:
- 4 salmon fillets about 6 oz each
- 2 tablespoons honey
- 1 tablespoon soy sauce
- 1 teaspoon freshly grated ginger
- 1 garlic clove minced
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste
- 1 tablespoon olive oil
For the Mango Salsa:
- 1 ripe mango diced
- 1/2 red bell pepper finely chopped
- 1/4 cup red onion finely chopped
- 1 small jalapeño seeds removed and minced
- Juice of 1 lime
- 2 tablespoons chopped fresh cilantro
- Salt to taste
Instructions
- Prepare the Marinade: In a small bowl, whisk together honey, soy sauce, ginger, garlic, and red pepper flakes.
- Marinate the Salmon: Season the salmon fillets with salt and pepper. Brush them with the marinade and let sit for about 10 minutes.
- Preheat the Grill or Pan: Heat a grill or a non-stick pan over medium-high heat. Add olive oil.
- Cook the Salmon: Place salmon fillets skin-side down. Cook for 5-7 minutes on each side or until fully cooked and glazed.
- Make the Mango Salsa: In a medium bowl, mix together diced mango, red bell pepper, red onion, jalapeño, lime juice, and cilantro. Season with salt.
- Serve: Place cooked salmon on a plate and top with a generous scoop of mango salsa.
Notes
- For a less spicy version, reduce or omit the red pepper flakes in the salmon marinade and the jalapeño in the salsa.
- You can grill the salmon for a smokier flavor or pan-sear it for convenience.
