Savory Salmon-Stuffed Avocados
Ingredients
- 2 large ripe avocados halved and pitted
- 200 g smoked salmon finely chopped
- 1/4 cup cream cheese softened
- 2 tablespoons red onion finely chopped
- 1 tablespoon capers drained and chopped
- 1 tablespoon fresh dill chopped, plus extra for garnish
- 1 teaspoon lemon zest
- 2 tablespoons lemon juice
- Salt and black pepper to taste
- Lemon slices for garnish
Instructions
- Prepare Avocados: Carefully scoop out a small amount of avocado flesh to create a larger cavity. Dice the scooped-out flesh and set aside.
- Mix Filling: In a bowl, combine the chopped smoked salmon, cream cheese, red onion, capers, dill, lemon zest, and lemon juice. Add the diced avocado. Season with salt and black pepper.
- Stuff Avocados: Spoon the salmon mixture into the avocado halves, filling them generously.
- Garnish and Serve: Garnish each stuffed avocado with a sprig of fresh dill and a lemon slice. Serve immediately or chill briefly in the refrigerator before serving.
Notes
- For a dairy-free option, replace cream cheese with mashed avocado or a dairy-free cream cheese alternative.
- Smoked trout or canned tuna can be used in place of smoked salmon for variation.
- To prevent avocados from browning, drizzle a little extra lemon juice over the top.
