  • 12 large shrimp peeled and deveined

  • 1 cup cherry tomatoes halved
  • ½ cucumber thinly sliced
  • ¼ red onion thinly sliced
  • Salt and pepper to taste
  • Fresh parsley for garnish

  • Quinoa Preparation: In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat and simmer, covered, for 15 minutes or until quinoa is tender. Fluff with a fork and set aside to cool.
