Ingredients
  

Salad:

  • 2 cups purple cabbage thinly sliced
  • 2 cups green cabbage thinly sliced
  • 1 cup firm tofu diced
  • 1 cup edamame shelled
  • 1 red bell pepper thinly sliced
  • 2 tbsp sesame seeds
  • Fresh cilantro leaves for garnish

Dressing:

  • 3 tbsp soy sauce
  • 2 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp honey or maple syrup
  • 1 garlic clove minced
  • 1 tsp ginger grated

Instructions
 

  • Prepare the Tofu: Press the tofu to remove excess water, then dice. Grill tofu in a non-stick pan until golden brown. Set aside to cool.
