Ingredients

  • 1 about 6 oz cod fillet
  • ½ cup potatoes, peeled and diced
  • ½ cup green beans
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a small bowl, mix together the olive oil, lemon juice, minced garlic, paprika, salt, and black pepper to create a marinade.
  • Place the cod fillet on a piece of aluminum foil large enough to wrap it. Pour half of the marinade over the cod, making sure it's well-coated. Reserve the other half of the marinade for later.
  • On a baking sheet, spread out the diced potatoes and green beans. Drizzle the remaining marinade over them, tossing to coat evenly.
  • Place the marinated cod on the baking sheet with the potatoes and green beans. Fold the foil around the cod, creating a packet, and seal it tightly.
  • Bake in the preheated oven for 20-25 minutes, or until the cod easily flakes with a fork and the potatoes are tender.
  • Carefully open the foil packet, and if desired, broil for an additional 2-3 minutes to give the cod a golden finish.
  • Sprinkle the dish with fresh chopped parsley before serving.
